Wonderful Jello Dessert

Dissolve 3 oz gelatin in 1 ¼ cup boiling water.  Add 1 pint vanilla ice cram.  When thick add fruit (strawberries, raspberries etc.) Chill and serve.


Frozen pumpkin parfait squares Serves 9 – 12


Mix 1 ½ cups graham cracker crumbs ( 9 crackers crushed) with ¼ cup each sugar and melted butter; press into bottom of 9” square pan.

Combine 1 ½ cup pumpkin with ½ cup brown sugar, ½ tsp salt, 1 tsp. Cinnamon, ¼ tsp. Ginger and ¼ tsp cloves.

Fold into 1 quart softened vanilla ice cream.

Pour into crumb-lined pan.

Cover and freeze until firm.

Cut into squares.

Top with whipped cream and pecans.
