Makes 2 ½ dozen
Bake at 350 F 10 – 12 minutes.
Sift 1 ½ cup flour ¼ t soda ¼ t salt
Cream: ½ cup butter, add gradually ½ cup brown sugar, firmly packed
Add 1 egg yolk (reserve white) ¼ teaspoon vanilla, 1/8 teaspoon maple flavoring
Add dry ingredients slowly. Mix thoroughly. Dough will be soft.
Arrange pecan halves in groups of 3 or 5 on greased baking sheet to resemble head and legs of turtle. Mold dough into balls, dip bottoms in unbeaten egg white and press lightly on nuts. Use a rounded teaspoon so tips of nuts will show when baked. Do not over bake. Cool and frost.
