Mother Carney’s Soda Bread

3 cups flour                  1 ¼  TBSP baking powder

1 tsp salt                       2 TBSP sugar

½  cup of raisins soaked in one cup water

2 eggs                          1 cup of milk

 Measure your flour.  In the states you can use self rising flour to compensate for the all purpose flour and baking powder.  Add salt and sugar.  Make a well in middle.  Mix the eggs and milk, drain raisins and place them in the well.  Mix the milk mixture bit by bit.  Grease your hand with oil and knead the dough for 5 – 10 minutes.  This makes three little heart shaped doughs that can be positioned to look like a shamrock.  Bake at 350 F for about 30 minutes until golden brown.
