Annie Borland’s Thumb Print Cookies

1 cup shortening  (1/2 cup butter)          2 cups flour                  ½ salt

½ cup brown sugar                               2 egg yolks                   1 teaspoon vanilla


Mix only until moistened.  Do not over mix.  Roll in 1 inch balls.  Dip into slightly beaten egg whites and roll in chopped nuts.


Bake 5 minutes at 375 F.  Remove from oven.  Press thumb on top of each cookie.  Return to oven and bake 8 minutes longer.  Fill thumb print with butter icing, peach or apricot preserves.
